Ingredients 4 pounds water 10 ounces Trigal Dorado Fresh Yeast 11 pounds, 2 ounces Trigal Dorado Bizcocho Mix 8 ounces (softened) margarine/ butter 2 ounces Westco Vanilla Bourbon Concentrate Directions · Add the liquid to the bowl, then add the other ingredients. · Mix for 15 minutes on medium until dough is well developed (medium speed is 3rd speed on a 4 speed machine). · Dough temperature should be 80°F. ADD: 1 pound Westco Florentine Fruit Mix, 1 pound raisins (soaked). · Add, then mix for an additional 2 minutes on low speed. · Rest dough: 15-20 minutes covered · Scale: 2-3 ounce pieces · Place 48 (6 X 8) on a standard paper lined sheet pan · Proof: to ¾-size, approximately 1 hour in a 95° medium proof box · Cross them with strawberry or lemon before baking or leave plain for icing after baking. · Bake: At 360°F for approximately 22-25 minutes until light golden in color. · Brush with melted Apri-glo while still hot right from the oven. · If left plain, cross them with ribbons of lightly heated BakeMark Vanilla Dipping Icing.

BakeMark Products Needed: Trigal Dorado Tres Leches Cake Mix Trigal Dorado Alegria (Ready to Use Liquid Mixture) Westco Ready to Use Strawberry Pie Glaze OR Westco Strawberry Topper QA Sprinkles Trigal Dorado Frozen Pastry Topping Westco Bavarian Crème Filling Optional: Fresh Strawberries Directions · Mix the batter according to instructions on the bag of Trigal Dorado Tres Leches Cake Mix and scale them into heart-shaped pans or foil. · Bake at 340°F until light golden in color (28-30 minutes). · Turn them out of the pan immediately after baking. · After they have cooled completely, slice each layer in half, place them cut side up on the workbench. · Pour 4-6 ounces of Trigal Dorado Alegria onto each layer. · Assemble the cakes by filling them with Westco Bavarian Crème and stacking half layers on top of each other. · Cover sides with Whipped Topping (Trigal Dorado Pastry Topping) and
